The Dedy Praline Cutter

is perfectly suited for cutting praline substance, fat substance, butter, gianduja, marzipan, fondant caramel, ganache, jelly substance, petit fours, cut pralines and similar products into precise squares, rectangles and rhombi. The praline substance slab of 360 x 360 mm is the result of rolling the material out between rails or filling mould frames or mould plates which we produce in accordance with your specifications.

Pralines are cut as follows:
The either rolled-out, poured-out and evenly distributed substance is applied to the base of the cutter.
The first cut is made by using the corresponding frame cutter. A thin sheet of stainless steel which is part of the set is pushed under the cut substance from behind and the strips are lifted off. The frame cutter is opened, and the strips are turned 90° before being cut a second time – the result is a square shape. To get a rhombi-like shape, the strips are placed transversely. If the goal is a rectangle, different frame cutters are used for the second cut. The base is made out of anodized aluminium; all other parts are made of stainless steel.

The Dedy Double Cutter

is ideal for precise cutting of various praline materials like the Dedy Praline Cutter. The advantage of the Double Cutter is that there is no need to turn the materials between the cross cut and the longitudinal cut. Thus the cutting process is one more optimized.

The base is made out of anodized aluminium, all other parts are made of stainless steel. The various partitions are easily changeable and also easy to clean.

The Dedy Mini Cutter

is ideal for travelling (show) confectioners who don‘t want to do without their exclusive equipment and it is also suitable for very small premises. The device measures only 180mm x 180mm. The base consists of anodized aluminium, all other parts are made of stainless steel.

The Dedy Königsberg Marzipan Cutter

is a high quality precision instrument which is made from brass. It has been especially made for quick and easy use when preparing the traditional Königsberg Marzipan forms. With one simple operation, three preparation steps can be achieved:

• to cut out the Marzipan form
• to form a hole in the marzipan which can be filled with the desired filling
• to form the unique zig zag edges.

The Dedy Hand Cutter

makes it possible to cut out up to 15 pralines or pastries at once. Various standard shapes are available,
additional shapes can be provided on request. It is made out of stainless steel.

Sweet Cutting Roller

The roll has a total width (including the handle) of 620mm and a sectional area of 380mm. It has 16 blades (100mm) made of stainless steel, their distances can be varied by means of the metal spacers in 5mm or 10mm. This conversion is simple and requires no tools.

The roller is used to cut candy mass, dough or similar materials in equally wide strips.

The Chocolate Rasper for 2.5 kg and 5kg Blocks

is the ideal machine for the easy and hygienic production of beautifully shaped chocolate shavings. With its efficiently arranged raspers and two-way rasping, it manages to process approximately 5 kg of chocolate per hours.

It utilizes the chocolate block in the most efficient way. The rasper has four different cutting edges. The results are light and thin chocolate shavings. The adjustable clamps of the 5 kg rasper allow processing different chocolate block sizes.

The Apple Peeling, Coring and Cutting Machine

peels apples and pears while at the same time removing the core. The fruit is simply pinned on the machine, the entire process works automatically. In addition, the thickness remains constant independent of the size of the fruit. It is possible to process fresh fruits with diameters between 30 and 100 mm and a fruit length up to 80 mm. The machine allows dividing the fruits into 2, 4, 6, 8, 10, 12, 16, and 24 segments.
